Ingredients:
3.5-4 cups cherry tomatoes
1 bulb garlic
3-4 TBSP olive oil
3-4 large leaves fresh Basil
1 pound pasta of choice
1/2 cup pasta water
sea salt
Procedure:
Grease a small tray or oven safe dish. cut the end off of the bulb of garlic and spray with oil. Place in oven at 400 degrees for approximately 10-15 minutes.
when garlic is done, squeeze cloves out and place into Dutch oven. Add olive oil & cook over medium heat for approximately 5 mins.
Next add your sliced cherry tomatoes and allow to simmer approximately 19 minutes. Season with salt. Stirring frequently.
Remove the garlic cloves and mash them against a cutting board with the side of a flat knife or bottom of a shot glass. Once you form the garlic paste, return it back to the pot.
Using an immersion blender, blend about half of the tomatoes into a sauce (unless you prefer to blend them all). Add the pasta water. Season and serve with your favorite pasta noodle, side of meat and veggie.
Notes: Freshly chopped basil and pecorino Romano makes this dish taste amazing! Freeze the leftover sauce and use for other dishes! Keeps 3 months when properly stored.
