May sub out blood orange for regular orange, lemon, or grapefruit. May sub out olive oil for oil of choice.
Ingredients
2 TBSP high quality extra virgin olive oil
1/2 Cup freshly squeezed blood orange
2 tsp dried mustard or 2 TBSP prepared Dijon mustard
2 TBSP local honey
2 TBSP poppy seeds or chia seeds
Instructions
Combine all in salad dressing container. Secure the lid and shake. May also blend together with wire whisk. Keep up to 5-7 days in refrigerator in an airtight container. Can also use as a marinade for chicken, turkey or pork.
Serving Suggestions
Toss with spinach, arugula, or butter lettuce, strawberries, avocado, and toasted walnuts for a crave-worthy salad.
Drizzle over a grain bowl with meat of choice, quinoa, roasted butternut squash, and goat cheese.
Serve as a marinade or glaze for grilled chicken, pork tenderloin, or salmon.
Spoon over roasted veggies like beets, carrots, or Brussels sprouts for a citrusy finish.
Quick Tips
Don’t have blood oranges? Regular oranges or Cara Cara oranges work well too!
Want it creamier? Add 1 tablespoon of Greek yogurt or tahini.
Need it vegan? Swap the honey for maple syrup or agave nectar.
Note that the addition of chia seeds will result in a consistency that is thicker.
