Ingredients
1-15 Oz can or box white beans, rinsed, drained
1/2 Cup GF oat flour + 1/4 Cup rolled oats
1/2 Cup + 2 TBSP sugar
3 TBSP melted coconut oil
1.5 TBSP pure vanilla extract
1/2 tsp sea salt
1/2 tsp baking soda
1 tsp apple cider vinegar
1 Cup dark chocolate chips or cocoa nibs
Instructions
Place all ingredients in blender or food processor on high for 1-2 minutes. Pour into mixing bowl, add chocolate chips or cocoa nibs and stir. Allow to stand for 5-8 minutes so the oats absorb.
Scoop onto lightly greased cookie sheet.
Bake 12-15 minutes until golden brown. Cool on tray and enjoy!
