Ingredients
2 eggs
1/3rd cup pure maple syrup
2 TBSP milk of choice
1 tsp pure vanilla extract
1 tsp cinnamon
1/4th tap baking powder
1/4th tsp baking soda
1/4th kosher sea salt
1.5 cups fine almond flour (if not fine - grind it and level before using)
1 cup shredded carrot (packed)
2 TBSP crushed pineapple (drained well)
Instructions
Line a 8x8 baking dish with parchment paper, lightly grease with non stick spray. Set aside. Then preheat oven to 350 degrees.
Add all ingredients to a mixing bowl in the order listed. Mix throughly.
Bake for 30-35 minutes or until toothpick comes out clean.
For the frosting: Mix 3-4 Oz plain, unsweetened Greek yogurt, 4 Oz cream cheese, 1 tsp vanilla extra and 1/4th cup powdered sugar.
Yields 9 squared portions. Refrigerate after frosting or cover tightly and freeze.
