Ingredients
½ cup raw walnuts
½ cup raw almonds
⅓ cup unsweetened dried cranberries
1 tablespoon chia seeds or flax meal (for extra fiber)
1 tablespoon honey
½ teaspoon vanilla extract
1 scoop vanilla protein powder (optional for a protein boost)
1–2 tablespoons water, as needed for consistency
Pinch of cinnamon and sea salt
Instructions
In a food processor, pulse walnuts and almonds until finely ground.
Add dried cranberries, protein powder (if using), chia seeds, cinnamon, and salt. Pulse again until combined.
Drizzle in honey and vanilla. Pulse until the mixture is sticky and clumps together. Add a splash of water if it’s too dry.
Roll into 1-inch balls and place on a parchment-lined tray.
Refrigerate for 20–30 minutes until firm.
Store in an airtight container in the fridge for up to a week—or freeze for longer!
