Ingredients
1 cup granulated sugar
1/2 cup butter
2 eggs
1 tsp pure vanilla extract
1 cup pureed pumpkin
3 small ripe bananas
2 cups all-purpose flour (sub cup for cup 1:1 gluten free flour blend if needed)
1 tsp baking soda
1 tsp sea salt
1 tsp ground cinnamon
1/2 tsp nutmeg
Optional: you may choose to use 1/2 - 1 tsp pumpkin spice blend and omit the nutmeg.
Instructions
Line a large loaf pan with parchment paper, lightly grease with non stick spray. Set aside. Then preheat oven to 350 degrees.
Mix sugar and butter first. Then, add eggs and mix again. Then add pumpkin and mashed banana. Mix.
In a separate bowl, mix all of your dry ingredients. Slowly add dry mixture to wet. Blend, but do not over mix.
Pour into prepared loaf pan and bake at 350 degrees for approximately 30-40 minutes until a toothpick comes out clean. Keep in mind different ovens vary in baking time.
Notes:
Optional Adds: 1/4 cup chopped nuts of choice, 1/4 cup raisins, 1/4 cup dried cranberries, 1/4 cup unsweetened coconut
