Almond Quinoa Crusted Salmon

Ingredients:


  • Salmon filets, wild caught Atlantic (4 filets or enough to feed your crowd)

  • Dijon mustard 

  • 1/4 cup almonds, slivered, unsalted

  • 1/4 cup cooked quinoa

  • 1-2 TBSP honey, raw

  • optional: you may use walnuts instead of almonds if desired


Procedure:


  1. Preheat oven to 400 degrees and lightly grease a sheet tray. 

  2. Lay salmon filets on tray and spread approximately 2-3 teaspoons of Dijon mustard on top. 

  3. Next, in a small bowl, mix almonds, quinoa and honey. Spread over salmon. 

  4. Bake in oven for approximately 20 minutes, based on the number of filets you are cooking. Salmon is done when you are able to lightly break meat apart with a fork.

  5. Store leftovers in fridge for up to 5 days or freeze to enjoy later.
