Ingredients


  • 1 cup Medjool dates, pitted (soaked 5–10 minutes in warm water if dry)

  • ¼ cup unsweetened nut or seed butter (we love almond butter!)

  • 1–2 Tbsp coconut flour or shredded coconut (for texture and binding)

  • ¼ tsp sea salt

  • ½ tsp pure vanilla extract

  • ~½ cup dairy-free dark chocolate chips or bar, melted (for dipping)


Instructions


  1. Soften your dates: If your dates are a bit dry, soak them in warm water for 5–10 minutes, then drain well.

  2. Blend the base: In a food processor, combine the dates, nut/seed butter, coconut flour or shredded coconut, sea salt, and vanilla extract. Blend until the mixture is thick, sticky, and holds together when pressed.

  3. Roll into balls: Using your hands, form small truffle-sized balls (about 1 tablespoon each). Place them on a parchment-lined plate or tray.

  4. Chill: Pop the truffles in the freezer for 10–15 minutes to firm up before dipping.

  5. Melt the chocolate: Gently melt your dairy-free chocolate chips or bar using a double boiler or microwave in 20–30 second intervals, stirring in between.

  6. Dip and set: Using a fork or skewer, dip each truffle into the melted chocolate, let the excess drip off, and place it back on the parchment paper.

  7. Optional toppings: Sprinkle with flaky sea salt, crushed nuts, or coconut flakes before the chocolate sets.

  8. Chill again: Let the truffles set in the fridge or freezer for 10–15 minutes before serving.


Storage Tips


Store your chocolate date truffles in an airtight container in the refrigerator for up to 1 week, or freeze for up to 3 months. Enjoy straight from the fridge or let them sit at room temp for a softer bite.

  • Swap almond butter for peanut, cashew, tahini, or sunflower seed butter.
