Ingredients
Approximately 2 pounds mixed ground pork, beef, veal
1 small onion, chopped fine
1 small green bell pepper, chopped fine
1 egg
2-3 cloves fresh garlic, minced
½ tsp course sea salt
Black pepper to taste
Approximately 24 almond crackers (crushed fine) May also use: 1 cup breadcrumbs or 4 thin bread slices, cubed
2 TBSP Worcestershire sauce
2 TBSP ketchup
2 tsp Dijon mustard
1 tsp onion powder
¼ tsp ground black pepper
Coarse sea salt to taste
Instructions
Clean onion, chopping it fine. Do the same with the green bell pepper.
Toss the onion and bell pepper into a bowl and combine the rest of the ingredients. Mix well with clean hands. Form into the shape of a meatloaf and place directly in the crockpot.
You may opt to cut assorted veggies or potatoes into larger pieces and lay on the bottom of my crockpot to boost up the meatloaf so it doesn't stick to the bottom or you can arrange them around the meat.
Cook on low for 8 hours or high for 5 to 6 hours.
Secure the lid and allow all to cook. When finished, whip the potato or cut in half to enjoy with your dinner. Plate into separate containers. Freeze for later. Enjoy!

Use Lean Ground Meat: If using beef, opt for 85-90% lean to avoid excess grease in the slow cooker. Venison is also a lean meat and works well when mixed with higher fat meats in dishes like this.
