Crockpot Pumpkin Butternut Squash Soup

Yields approximately 8-10 cups. Freezes well and will keep tightly sealed for 4 months


Ingredients:


  • Approximately 2 pounds butternut squash, roasted

  • Approximately 2 pounds fresh pumpkin, roasted

  • 1 small white onion, chopped

  • 1 small apple peeled, chopped or (1) 4oz. unsweetened, natural applesauce 

  • 1 TBSP coconut or brown sugar

  • 1 tsp sea salt

  • 1/2 tsp cracked pepper

  • 1/2 tsp ground cinnamon

  • 3-4 cups vegetable or chicken broth

  • 1/2 cup full fat coconut milk or half and half


Procedure:


  1. Wash outside of squash & pumpkin. Slice in half. Remove the seeds. Lightly grease sheet tray and lay pumpkin and squash "cut side" down. Bake at 375 degrees, approximately 40 minutes. 

  2. When cooled scoop out inside of pumpkin & squash and place in crockpot. 

  3. Add all ingredients but milk. Cook on high for 3-4 hours or on low for 5-6 hours. 

  4. When done use blender to puree soup until consistently smooth.

  5. Add milk of choice and stir. Soup will be thick, however if it is too thick, feel free to add more broth and season to your liking. Enjoy!
