Grain Free Pumpkin Pie Muffins

Yields 12 standard-sized muffins. Store in air tight container or immediately freeze to enjoy later.  1 muffin is a serving.


  • 1 and 1/3rd nut butter of choice 

  • 2/3rd puréed pumpkin

  • 4 eggs  

  • 1/4th cup local honey or pure maple syrup 

  • 2 TBSP pumpkin pie spice  

  • 1 TBSP pure vanilla extract 

  • 1 tsp baking soda

  • 1/4th sea salt 

  • 2/3rd cup cocoa nibs or chocolate chips


  1. Add ingredients, except the chocolate chips, in a blender and blend all ingredients until smooth and well combined.

  2. Add the chocolate chips directly to the blender and stir gently with a spatula. 

  3. Pour into greased muffin tins (you can also use paper liners) and bake in oven at 375 degrees for approximately 15-20 minutes. *Take care not to overbake.  

  4. Allow to cool for 10 minutes on drying rack. Enjoy!
