Yields approximately 1.5 cups. Serving size is 1/2 cup
Nutrition calculated without protein powder. Add in additional protein if using your own protein powder. Store in airtight container up to 3 days.
Ingredients:
2 cups mashed sweet potatoes (2 medium, cooked, peeled)
3 large eggs
1/3rd cup pure maple syrup or local honey
1/2 cup milk of choice (if non-dairy use unsweetened)
1 teaspoon pure vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1/4 teaspoon sea salt
Procedure:
Preheat oven to 350 degrees F and lightly grease a 9-inch round pie dish or an 8x8 square baking dish with a small amount of clarified butter or oil.
In a large mixing bowl, whisk together the eggs, maple syrup, milk and vanilla until smooth.
Add the mashed potatoes and spices. Mix until combined and fluffy.
Pour mixture into prepared baking dish, spreading evenly.
Bake in the preheated oven for 40-45 minutes, or until a toothpick comes out of the center clean.
Let cool at least for 30 minutes before slicing or refrigerating.
Store under refrigeration for 3-5 days or freeze in an airtight container up to 3 months.
NOTE: you can easily prepare this batter ahead and bake off the next day if easier for your meal prep.
